Easy 20-Minute Chicken Fingers


Who doesn’t love chicken fingers? How about tasty chicken fingers that are healthy for you and ready in 20 minutes? Sounds too good to be true, I know.

Trader Joe’s has this amazing teriyaki marinade, Island Soyaki. It tastes and smells good enough to be used as perfume. It’s half of what made these fast ‘n’ fabulous chicken fingers so delicious.

Japanese Panko breadcrumbs pack a satisfying crunch without the heaviness of traditional breadcrumbs. They’re the other half of what made these chicken fingers so good.

Ingredients
·      Enough Trader Joe’s Island Soyaki marinade to cover your chicken fingers
·      1-2 tblsp Olive Oil
·      1 cup Panko breadcrumbs
·      1 package of chicken tenders
·      1 egg lightly beaten

Special Tools


Directions

1.    Preheat oven to 450ºF
2.   Place rack over baking sheet
3.   Marinate chicken fingers in marinade  (enough to cover them) for about 8 hours.
4.   Prepare breadcrumbs (mix olive oil and breadcrumbs)
5.    Beat egg
6.   Shake excess marinade from chicken fingers and roll in beaten egg. Shake excess egg from chicken fingers and coat in breadcrumbs.
7.   Place coated chicken on rack. Repeat until all chicken fingers are done. Bake for 15 minutes.
